Fat

Alongside carbohydrates and protein, fats are another key nutritional component. They supply and store energy, as well as providing important substances which your body cannot produce on its own, such as essential fatty acids. Moreover, many vitamins cannot be processed by your body without the addition of fat. On top of this, fats are important flavor carriers and make for a pleasant “mouthfeel”. 

Dietary fats consist of glycerol and various fatty acids: saturated and unsaturated fatty acids and trans-fatty acids. These all have very different properties.

Saturated fatty acids

These are mainly found in animal-based foodstuffs such as butter, cheese, meat or cream. The main saturated fatty acid stearin found in chocolate does not, however, raise your blood cholesterol level as much as saturated fatty acids are known to.

Ungesättigte Fettsäuren

Sie finden sich in vielen pflanzlichen Nahrungsmitteln. Grundsätzlich unterscheidet man zwischen einfach und mehrfach ungesättigten Fettsäuren.  Während der Körper einfach ungesättigte Fettsäuren selbst produzieren kann, sind die mehrfach ungesättigten Fettsäuren essentiell, das heißt, sie müssen über die Nahrung aufgenommen werden. Kakaobutter enthält 28% der einfach ungesättigten Ölsäure und 2% der essentiellen, zweifach ungesättigten Fettsäure Linolsäure.

Unsaturated fatty acids

These are found in many vegetable foodstuffs. A fundamental distinction is made between mono- and polyunsaturated fatty acids. While your body can produce mono-unsaturated fatty acids itself, the polyunsaturated fatty acids are essential, which means they have to be taken in through food
