Eating foods which are rich in sugar and carbohydrates can – this has been scientifically proven – produce a feeling of satisfaction. The substance responsible for this is serotonin, a neurotransmitter which is found in higher quantities in the brain after eating sugar and carbohydrates.

It is derived from an amino acid named tryptophan and converted into the “mood enhancer” serotonin in the brain. This rise in the serotonin level works especially well in the case of foods which contain only low amounts of protein, such as dark chocolate. In other words, we intuitively improve our mood slightly with every bite of chocolate.
